What a great season we had here at Breakers East! We exceeded 2010’s Revenue totals for the months of June, July & August summer by $150,164.00. We continue to maintain a high level of repeat clientele. The main reason our guests keep coming back is because we are a “family” oriented property. With everyone working together and keeping the lines of communication open, we will continue to grow and be the best property on the Emerald Coast. It’s time to sit back and reflect on our great season and see what we can do to have an even better year in 2012. The staff is currently getting plans in place to what we are hoping will be an epic year. We look forward to seeing you all October 22nd at the Homeowners Meeting. If you planning to attend the Homeowners Meeting, please RSVP Jon as soon as possible.

Meet Ken Jennings - Our Newest Team Member! - Ken was born in Farmland, Indiana and has a son named Timothy. He decided to move to the Emerald Coast area 6 years ago for a change of scenery (having family in the area made the transition easy).

Ken has worked in construction and remodeling homes but his passion is doing body work on cars. His long term goal is to own his own body shop one day.

Debbie's Desk:

WOW! What a terrific summer we have had here at Breakers. We welcomed back old friends and made a lot of great new ones along the way. Everyone is leaving with fond memories of there time here in what we like to call a “little touch of paradise”.


Snowbird season is right round the corner. Our winter friends are so much fun. As summer comes to an end, we are in full gear getting ready for what we know will be a terrific 2012. Enjoy the cooler temperatures that are ahead. We will see you soon.




Housekeeping notes:

After a very busy summer season it’s that time of the year to get our units back in great shape. Hats off for our terrific housekeeping department, they worked so hard cleaning and maintaining our units in great shape.


Keep in mind that deep cleans are just around the corner. We are in the process of replenishing units with linens, towels and other inventory items, as needed. We have had several carpets and rugs cleaned with more being scheduled. The life expectancy of carpet in a rental is 3-5 years. In some of the older carpets after being cleaned, the old spots return. If your carpet is being cleaned several times a year and old spots keep reappearing it’s probably time to replace your carpet.

Forecast

We are optimistic about the fall and winter seasons. Most guests are booking 2 weeks in advance or less. We look for the bookings to be on the rise within the next few weeks. Couples with small children or no children tend to visit our area during these months.


We will continue to serve you and ensure that "OUR" property is the best on the Emerald Coast.




Team Member Recipe: Smokin’ Baby Got Back Ribs

Let me say, it surely is a good thing that the Kitchen Crew is made up of enthusiastic eaters! We had our plates chock full of good eats recently as we grilled our way through the many delicious dishes entered into the Just A Pinch Grill and WIN recipe contest. Happily, after much serious sampling and contemplative munching, one recipe stood out as the grand poo-bah of grill-friendly recipes: Sherri Logan Williams' Smokin' Baby Got Back Ribs!

These smoky, ultra-flavorful ribs were a unanimous hit with the panel of hungry judges. In fact, one judge - who asked that I keep her appetite anonymous - eagerly went back for thirds! Judged for ease of preparation, creativity, presentation and flavor, Sherri's recipe really represented a total package. This dish is simple enough for non-grillers to experiment with, yet has flavors complex enough to keep grill pros coming back for more.

While some of the judges felt that the addition of cumin was truly Sherri's secret weapon, others in the Crew loved her crafty smoking technique. "No smoker, no charcoal grill, no problem!" says Sherri, a resident of Crestview, FL. "What I used to do is simply soak some wood chips and put them in some aluminum foil, or buy a [metal] smoke box. On one part of the grill place your meat, and the other side of the grill - underneath the grill grates - put the wood chips." Sherri then takes the flavor even further by placing a pan of apple juice, water and spirits on the grill. The resulting combination of smokiness and subtle fruitiness is truly out of this world.

For those who would prefer to make the recipe without alcohol, Sherri suggests using a simple can of cola! "The soda will tenderize the ribs and add a nice sweetness," she says. I use Coke in a lot of recipes when grilling or smoking. Use 1-2 cans depending on how many lbs of ribs you are smoking."

smokin' baby got back ribs

Serves: 10-12
Prep Time: 15 Min
Cook Time: 4 Hr


Ingredients:
5-6 lb pork baby back ribs

RUB
3 Tbsp kosher salt
3 Tbsp brown sugar
1 Tbsp garlic, granulated
1 Tbsp onion, granulated
1 Tbsp cumin, ground
1 Tbsp chili powder
2 Tbsp paprika, sweet mild
1 Tbsp chipotle powder
1 tsp coriander, ground
1 tsp black pepper

BASTE
2 c apple cider
2 Tbsp olive oil, extra virgin
1 lg lemon juice, fresh
1/2 c barbecue sauce
1/2 c jack daniels whiskey


Directions:

1)   Rub a generous amount of rub on ribs. Make sure they are evenly coated. Wrap ribs with plastic wrap and refrigerate over night.
2)  Prepare Grill: I use a propane powered smoker. Soak wood chips for at least 30 minutes. I use a mixture of hickory and oak chips. Fill the water pan with apple cider, beer or liquid of choice. Smoker temperature should be between 250-275 degrees. (If using a charcoal grill, place charcoal and/or wood chunks on one side of the grill and place the water pan underneath the ribs on the grill rack. Maintain the grill temperature by changing out charcoal and wood as needed.)
3)  3. Baste ribs after the first hour as needed, to keep the ribs nice and moist. Change wood chips every 1 1/2 hours. Smoke for 4 hours until ribs are tender. Remove from smoker and cover with foil.
